  • 3 large carrots, cut into thick chunks
  • 8 oz pearl onions, peeled
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 bouquet garni (thyme and bay leaf)
  • 2 tbsp extra virgin olive oil

Instructions

  1. Pat beef dry and sear in batches in olive oil over medium-high heat until browned on all sides. Remove and set aside.
