  • 2 tbsp honey or brown sugar
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Cut the pork tenderloin into medallions. In a bowl, combine minced garlic, grated ginger, lime juice, soy sauce, and honey. Add the pork, ensuring it's coated evenly. Marinate for at least 30 minutes.
  2. Rinse the basmati rice under cold water until clear. In a saucepan, combine rinsed rice with coconut milk and an equal amount of water (about 1 cup). Bring to a boil, then reduce heat to low and cover for about 15 minutes.
  3. Heat oil in a large skillet over medium-high heat. Cook marinated pork medallions for about 4-5 minutes on each side until golden brown.
  4. Once the pork is nearly done, add any remaining marinade to deglaze the skillet.
  5. Fluff the coconut rice with a fork and serve topped with pork medallions and garnished with green onions.
