  • 1 cup sliced cucumbers (preferably English)
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved

  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt & pepper to taste
  • ¼ cup toasted nuts or seeds (optional)

Instructions

  1. Wash and dry the mixed greens thoroughly.
  2. Slice cucumbers and cherry tomatoes into bite-sized pieces.
  3. Halve the avocado, remove the pit, scoop out the flesh, and cut it into cubes.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until emulsified.
  5. In a large bowl, combine greens, cucumbers, tomatoes, avocado cubes, and fresh herbs. Drizzle dressing over the top.
  6. Sprinkle toasted nuts or seeds just before serving and give everything a gentle toss.
