  • 4 garlic cloves, minced
  • 1/4 cup freshly squeezed lemon juice

  • 2 tsp fresh thyme, chopped
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika

Instructions

  1. In a bowl, whisk together olive oil, garlic, lemon juice, rosemary, thyme, salt, pepper, and paprika.
  2. Place the cleaned Cornish hens in a resealable bag or dish and pour the marinade over them. Ensure they are well coated and refrigerate for at least 1 hour (or overnight for maximum flavor).
  3. Preheat your grill to medium-high heat (375°F/190°C).
  4. Grill the hens breast-side down for 15-20 minutes until marked and slightly charred.
  5. Flip carefully using tongs; baste with leftover marinade and cook for another 15-20 minutes until internal temperature reaches 165°F (75°C).
  6. Remove from grill and let rest for about 10 minutes before serving.
