Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup toasted coconut flakes
  • 1/2 cup sweetened condensed milk
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes). Gradually add flour until fully combined.
  2. Roll dough into 1-inch balls and place on parchment-lined baking sheets. Create a small well in the center of each ball.
  3. Bake for 12-15 minutes until golden brown. Allow cookies to cool slightly on wire racks.
  4. In a saucepan over medium heat, combine sweetened condensed milk and toasted coconut. Stir continuously for about 5-7 minutes until thickened.
  5. Spoon the caramel-coconut mixture into the wells of cooled cookies. Let set while you melt chocolate chips in the microwave in 30-second intervals until smooth.
  6. Drizzle melted chocolate over each cookie generously.

Keywords: For added crunch, consider mixing in chopped nuts with the coconut. Substitute dark chocolate for a richer flavor profile. Toasting the coconut before adding it to the caramel enhances flavor.
