  • 4 salmon fillets (6 oz each)
  • 1/4 cup honey
  • 3 tbsp Sriracha sauce (adjust to taste)
  • 3 garlic cloves, minced
  • 2 cups mixed vegetables (bell peppers, broccoli)
  • 2 cups cooked rice or quinoa
  • 2 tbsp low-sodium soy sauce
  • Juice of 1 lime

Instructions

  1. In a medium bowl, whisk together honey, Sriracha sauce, soy sauce, minced garlic, and lime juice until smooth.
  2. Place salmon fillets in a shallow dish and pour half of the marinade over them. Marinate for at least 30 minutes in the fridge.
  3. Preheat grill or skillet over medium-high heat. Remove salmon from marinade (discard leftover marinade) and cook skin-side down for 4-5 minutes per side until golden brown and flaky.
  4. In another skillet, add oil over medium heat and sauté mixed vegetables for about 5-7 minutes until tender-crisp.
  5. Assemble bowls starting with rice or quinoa, topped with sautéed veggies and salmon. Drizzle remaining marinade over the top. Garnish with sesame seeds or green onions if desired.
