  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • ½ cup fresh lemon juice
  • Zest of 2 lemons
  • 1 tsp vanilla extract
  • 3 large eggs, room temperature

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of a greased baking dish.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar until fluffy.
  3. Mix in sour cream, vanilla extract, lemon juice, and zest until combined.
  4. Add eggs one at a time, mixing gently after each addition.
  5. Reserve half of the mixture, stir additional lemon juice and zest into it for marbling.
  6. Pour plain cheesecake mixture over the crust and dollop lemon mixture on top; swirl gently.
  7. Bake for 30-35 minutes until set around edges and slightly jiggly in the center. Cool completely before slicing.
