Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1.5 cups orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 medium zucchini, diced
  • 2 cups low-sodium chicken broth
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 5 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove from the pan and let rest.
  2. In the same skillet, add diced red bell pepper and zucchini; sauté for about 3 minutes until softened. Add minced garlic and cook until fragrant (about 30 seconds).
  3. Return the chicken to the skillet. Stir in orzo, cherry tomatoes, dried oregano, lemon juice, and chicken broth. Bring to a gentle simmer.
  4. Cover partially and simmer for about 15 minutes until the orzo absorbs most of the liquid and is tender. Adjust seasoning as needed before serving.
