  • 4 medium Russet potatoes, thinly sliced
  • 1 can (15 oz) high-quality tomato sauce
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tsp cumin powder
  • 2 tsp paprika
  • 2 large eggs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté onions until soft, about 5 minutes.
  3. Add ground beef; cook until browned. Stir in garlic, cumin, paprika, and tomato sauce. Simmer for 10 minutes.
  4. In a greased baking dish, layer half the sliced potatoes and half the meat mixture. Repeat layers.
  5. Beat eggs with cheese; pour over layered dish and top with remaining cheese.
  6. Bake uncovered for 35–40 minutes until bubbly and golden brown. Let cool slightly before serving.
