  • 1/2 cup brown sugar (light or dark)
  • 1/4 cup whole milk
  • 2 tsp instant yeast
  • 1/4 tsp salt
  • 1/4 cup powdered sugar (for drizzling)

Instructions

  1. Prepare the Dough: Mix sourdough starter and flour in a large bowl. Add warm milk and let sit for about 30 minutes until bubbly.
  2. Brown the Butter: In a saucepan over medium heat, melt unsalted butter until golden brown and fragrant.
  3. Make the Cinnamon Filling: Combine brown sugar, cinnamon, and salt in a bowl. Spread softened butter over rolled-out dough and sprinkle with the cinnamon mixture.
  4. Roll & Slice: Roll dough tightly into a log shape, slice into 1-inch thick mini buns, and place in a greased baking dish.
  5. Bake: Preheat oven to 350°F (175°C). Let buns rise for another 30 minutes before baking for 25–30 minutes until golden brown.
  6. Finish: Drizzle with powdered sugar mixed with milk after cooling slightly.
