  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter (softened)

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Add egg and vanilla; mix well.
  4. In another bowl, whisk together oats, flour, baking soda, salt, and cinnamon.
  5. Gradually mix dry ingredients into wet mixture until just combined.
  6. Chill dough for at least 30 minutes in the refrigerator.
  7. Scoop rounded tablespoons of dough onto prepared sheets, spaced two inches apart.
  8. Bake for 10-12 minutes until edges are golden but centers remain soft; cool on racks.
  9. For filling, beat together marshmallow fluff, powdered sugar, and butter until smooth.
  10. Spread filling on half of the cooled cookies and top with remaining cookies to form sandwiches.
