  • 4 ripe peaches, sliced
  • 1 cup granulated sugar
  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 1 cup old-fashioned oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, mix flour, oats, sugar, cinnamon, and salt. Cut in cold butter until crumbly.
  3. In another bowl, combine sliced peaches with sugar, lemon juice, and baking powder.
  4. Press half of the crumb mixture into the dish. Layer the peach filling on top and sprinkle remaining crumbs over it.
  5. Bake for 40-45 minutes until golden brown. Let cool before slicing into squares.
