  • 4 medium bell peppers (any color)
  • 1 lb lean ground beef
  • 1 medium yellow onion, diced
  • 1 cup provolone cheese, shredded
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. In a skillet over medium heat, cook the ground beef and diced onion until the meat is browned and onions are translucent. Drain excess grease.
  3. Stir in garlic powder, salt, and pepper. Mix in half of the cheese until melted.
  4. Fill each pepper with the beef mixture, topping with remaining cheese.
  5. Place peppers upright in a baking dish with a little water at the bottom. Cover with foil and bake for 25 minutes.
  6. Remove foil in the last five minutes to brown the cheese. Allow to cool slightly before serving.
