  • 1 large sweet onion, diced
  • 4 cloves garlic, minced
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 3 cups low-sodium chicken broth
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Prepare your ingredients by chopping the pork shoulder into 1-2 inch cubes and dicing the onions.
  2. Heat a splash of olive oil in a large pot over medium-high heat. Sear the pork until golden brown on all sides (about 5-7 minutes).
  3. Add diced onions and minced garlic; cook until onions are translucent.
  4. Stir in diced tomatillos and chopped jalapeños.
  5. Pour in chicken broth to cover the mixture (about 3 cups), bring to a boil, then reduce heat and let simmer gently for 1.5 hours.
  6. Blend any leftover tomatillos, jalapeños, cilantro, lime juice, and some broth until smooth.
  7. Once pork is fork-tender, stir in the blended sauce and simmer for an additional 20 minutes before serving over rice or in tacos.
