Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix canned pumpkin, eggs, sugar, vanilla extract, and melted butter until smooth.
  3. In another bowl, sift together flour, baking powder, spices, and salt. Gradually fold into the pumpkin mixture until just combined.
  4. In a separate bowl, beat softened cream cheese with sugar and vanilla extract until smooth.
  5. Fill muffin cups two-thirds full with batter, add a dollop of cream cheese filling, then top with more batter.
  6. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
