Instructions

  1. Preheat oven to 350°F (175°C) and grease a bundt pan.
  2. In a bowl, mix pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until smooth.
  3. In another bowl, whisk together flour, baking powder, cinnamon, and salt.
  4. Gently fold dry ingredients into the wet mixture until just combined.
  5. For the streusel topping, mix brown sugar, chopped nuts (if using), cinnamon, and flour until crumbly.
  6. Pour half of the batter into the bundt pan. Add half of the streusel topping. Pour in remaining batter and top with remaining streusel.
  7. Bake for 55-60 minutes or until a toothpick comes out clean. Let cool before serving.
