  • 2 medium beets, roasted
  • 2 garlic cloves, roasted
  • 1/4 cup tahini
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast on a baking sheet for 45-60 minutes until tender.
  2. During the last 20 minutes of roasting, wrap garlic cloves in foil with olive oil and roast alongside beets.
  3. Once cooled, peel beets under running water. In a food processor, combine roasted beets, garlic, tahini, lemon juice, olive oil, salt, pepper, and cumin.
  4. Blend until smooth, scraping down the sides as needed. Adjust seasoning if necessary.
  5. Serve in a bowl drizzled with olive oil and additional herbs if desired.
