  • 1 cup short-grain sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 8 oz full-fat cream cheese
  • 2 tbsp low-sodium soy sauce
  • 2 green onions, thinly sliced
  • 1 avocado, sliced
  • 1 tbsp toasted sesame seeds
  • 2 nori sheets, cut into strips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with nonstick spray.
  2. Rinse and cook the sushi rice according to package instructions (about 20 minutes).
  3. Mix rice vinegar and sugar in a bowl until dissolved; fold into the warm rice.
  4. Chop salmon into bite-sized pieces and season with salt and pepper.
  5. Combine salmon with cream cheese in a large bowl until mixed.
  6. Layer half of the rice in the baking dish, add the salmon mixture, then top with remaining rice.
  7. Bake for 25-30 minutes or until golden on top.
  8. Garnish with avocado, green onions, sesame seeds, and nori strips before serving.
