Ingredients

Scale
  • 1 sheet puff pastry (thawed)
  • 2 fresh salmon fillets (about 6 oz each)
  • 2 cups fresh baby spinach
  • 4 oz cream cheese (softened)
  • Zest of 1 lemon
  • 2 garlic cloves (minced)
  • 1 egg (beaten with 1 tbsp water for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté minced garlic until fragrant. Add spinach and cook until wilted, about 2-3 minutes. Allow to cool slightly before mixing in cream cheese and lemon zest.
  3. Roll out the puff pastry on a floured surface and cut into squares large enough to envelop each salmon fillet. Place some spinach mixture in the center of each square, then top with a salmon fillet.
  4. Fold the pastry over the filling to create pockets and seal tightly with a fork. Brush each Wellington generously with egg wash.
  5. Bake for 20-25 minutes or until golden brown and puffed up.
