  • 1 cup fresh spinach, chopped
  • 1 lb Italian sausage (mild or spicy)
  • 6 large eggs
  • 2 cups whole milk
  • 1 cup shredded cheddar cheese
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent (3-5 minutes).
  3. Add crumbled sausage and cook until browned (5-7 minutes). Stir in spinach until wilted (about 2 minutes).
  4. In a bowl, whisk together eggs, milk, salt, and pepper.
  5. Layer half of the bread cubes in the baking dish followed by half of the egg mixture and half of the sausage-spinach mix. Repeat layers.
  6. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 15-20 minutes until golden brown. Let cool slightly before serving.
