  • 1 cup panko breadcrumbs

  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Halve the acorn squashes lengthwise and scoop out the seeds.
  2. Drizzle olive oil over the cut sides of the squash; season with salt and pepper. Place cut-side down on a baking sheet lined with parchment paper.
  3. Roast for about 30 minutes until tender.
  4. In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent (about 5 minutes), then add garlic and cook until fragrant.
  5. Add crumbled sausage to the skillet; cook until browned (7-10 minutes).
  6. Stir in breadcrumbs, Parmesan cheese, herbs, salt, and pepper until well combined.
