Ingredients

Scale
  • 4 large Russet potatoes
  • 1 lb lean ground beef
  • 2 tsp smoked paprika
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh chives, chopped
  • 1 cup shredded sharp cheddar cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup sour cream (for topping)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes and pierce with a fork. Bake directly on the oven rack for about 45 minutes until tender.
  2. Heat olive oil in a skillet over medium heat. Sauté onions and garlic for about 5 minutes until softened.
  3. Add ground beef to the skillet; cook until browned, breaking it apart as it cooks. Season with smoked paprika, salt, and pepper.
  4. Stir in fresh herbs and half of the shredded cheese; remove from heat and let cool slightly.
  5. Slice baked potatoes in half lengthwise and scoop out some flesh to make room for stuffing. Fill each potato with the beef mixture and top with remaining cheese.
  6. Return stuffed potatoes to the oven for an additional 15 minutes until cheese is bubbly and golden brown.
