  • 1 small yellow onion, diced

  • 1 bell pepper (any color), diced
  • 2 cups chicken broth

  • 1 tsp cumin
  • 1 tsp paprika

Instructions

  1. Prepare ingredients: Dice onion and bell pepper, and mince garlic.
  2. Sauté vegetables: In a large skillet, heat olive oil over medium heat. Add onion and bell pepper; sauté for 3-4 minutes until softened.
  3. Add garlic & spices: Stir in minced garlic, cumin, and paprika. Cook for another minute.
  4. Incorporate rice & tomato sauce: Add rice and tomato sauce; mix until grains are coated.
  5. Add broth & simmer: Pour in chicken broth; bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes until liquid is absorbed.
  6. Fluff & serve: Let sit for 5 minutes off the heat before fluffing with a fork.
