  • 2 lbs pork belly, cut into 1-inch cubes
  • 1/2 cup brown sugar
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup rice wine vinegar
  • 2 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 tsp five-spice powder
  • 1 tbsp sesame oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together soy sauce, brown sugar, rice wine vinegar, garlic, ginger, five-spice powder, and sesame oil until well combined.
  3. Toss the pork belly cubes in the marinade until evenly coated. Let marinate for at least one hour in the refrigerator (overnight for best results).
  4. Heat a skillet over medium-high heat and sear the marinated pork belly pieces until golden brown on all sides (about 5 minutes).
  5. Transfer the seared pork belly to a baking dish and pour any remaining marinade over it. Cover with foil and bake for one hour.
  6. Remove the foil and bake uncovered for an additional 20-30 minutes until the glaze is sticky and caramelized.
  7. Allow to rest briefly before serving over steamed rice or with sautéed vegetables.
