  • 2 medium carrots, finely chopped
  • 1 cup frozen peas
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 large Yukon Gold potatoes, peeled and diced (about 1 lb)
  • 3 tbsp unsalted butter
  • 1/4 cup whole milk or heavy cream
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, brown the ground lamb or beef until fully cooked; drain excess fat.
  3. Add the chopped onions and carrots; sauté for about 5 minutes until softened. Stir in minced garlic.
  4. Add chicken broth, thyme, and rosemary; simmer until heated through.
  5. Boil the diced potatoes in salted water until fork-tender. Drain and mash with butter and milk until creamy; season with salt and pepper.
  6. In a baking dish, layer the meat mixture evenly and top with mashed potatoes, creating peaks with a fork.
  7. Bake for 25-30 minutes or until the top is golden brown.
