  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 1/4 cup brown sugar
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup ketchup
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp cornstarch mixed with 2 tbsp cold water

Instructions

  1. Preheat oven to 400°F (200°C). In a large bowl, mix ground beef, breadcrumbs, minced garlic, chopped onion, egg, salt, and pepper until just combined.
  2. Shape mixture into one-inch meatballs and place on a parchment-lined baking sheet. Bake for 20 minutes or until cooked through.
  3. While baking, whisk together brown sugar, soy sauce, ketchup, rice vinegar, and cornstarch mixture in a saucepan over medium heat. Stir until thickened (about 5 minutes).
  4. Add baked meatballs to the sauce and simmer on low heat for another 10 minutes.
