  • 1 can pinto beans (15 oz), drained and rinsed
  • 1 can kidney beans (15 oz), drained and rinsed
  • 1 can fire-roasted diced tomatoes (14.5 oz)
  • 1 medium onion, diced
  • 1 cup bell peppers (red and yellow), diced
  • 3 garlic cloves, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 2 tbsp olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, heat olive oil. Sauté onion and bell peppers until softened, about 5 minutes.
  3. Add minced garlic, chili powder, and cumin; sauté for an additional minute.
  4. In a mixing bowl, combine the sautéed vegetables with black beans, pinto beans, kidney beans, and diced tomatoes; mix well.
  5. Transfer the mixture to a greased baking dish and bake uncovered for 25-30 minutes until heated through.
  6. Garnish with fresh cilantro if desired and serve warm.
