  • 4 tilapia fillets (about 6 oz each)
  • 2 large red bell peppers
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil (divided)
  • Juice of 1 lemon
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 450°F (230°C). Halve the red bell peppers, remove seeds, and place cut-side down on a baking sheet. Roast for about 25 minutes until skins blister.
  2. Transfer roasted peppers to a bowl, cover with plastic wrap, and steam for 10 minutes. Peel off the skins.
  3. In a skillet over medium heat, heat 1 tablespoon of olive oil and sauté minced garlic until fragrant. Blend peeled peppers with garlic, lemon juice, salt, and pepper until smooth. Return to the skillet over low heat to warm through.
  4. Season tilapia fillets with salt and pepper. In another skillet over medium-high heat, add remaining olive oil and cook fillets for about 3-4 minutes on each side until golden brown and flaky.
  5. Serve tilapia topped with roasted pepper sauce and garnish with cilantro.
