  • 9 oven-ready lasagna noodles
  • 4 cups ripe tomatoes, diced
  • 15 oz ricotta cheese (whole milk)
  • 2 cups shredded fresh mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup fresh basil leaves, chopped
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until softened (3-5 minutes).
  3. Add diced tomatoes, salt, and pepper; simmer for 10-15 minutes.
  4. In a bowl, mix ricotta cheese with half of the Parmesan, salt, pepper, and basil until creamy.
  5. In a baking dish, layer some tomato sauce at the bottom. Place noodles, followed by ricotta mixture and mozzarella; repeat until all ingredients are used.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake another 15 minutes until bubbly and golden.
