Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Grate the zucchini and set aside.
  3. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and sugar.
  4. In another bowl, mix eggs, oil, and vanilla until smooth. Stir in the grated zucchini.
  5. Fold the wet ingredients into the dry ingredients until just combined. Add nuts or chocolate chips if desired.
  6. Pour into the prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
  7. Allow to cool before slicing.
