- 1 lb boneless, skinless chicken breasts (about 3 pieces)
- 8 oz penne pasta
- 1 cup fresh asparagus, chopped
- 8 oz cremini or button mushrooms, sliced
- 1 cup heavy cream
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Cook the Pasta: Boil salted water in a large pot. Add penne pasta and cook until al dente (8-10 minutes). Drain and set aside.
