- 3–4 boneless skinless chicken breasts (1.5 lbs)
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
- Heat olive oil in a large pot over medium heat. Add seasoned chicken breasts and cook until golden brown, about 5-7 minutes. Remove from the pot and set aside.
- In the same pot, sauté minced garlic until fragrant (about 30 seconds). Add uncooked pasta, chicken broth, and heavy cream; stir to combine.
- Bring to a gentle boil, then reduce heat to low. Simmer until pasta is tender and liquid is mostly absorbed (around 15 minutes).
- Stir in Parmesan cheese and butter until melted and creamy.
- Garnish with chopped parsley before serving.
