Ingredients

  • Eggplants
  • Ground lamb or beef
  • Onion
  • Garlic
  • Tomato paste
  • Cinnamon
  • Béchamel sauce (butter, flour, milk)
  • Nutmeg

Instructions

  1. Slice eggplants into ½-inch rounds, salt them, and let sit for 30 minutes to remove bitterness.
  2. In a skillet over medium heat, sauté chopped onions until translucent; add minced garlic and cook until fragrant.
  3. Add ground meat and cook until browned; stir in tomato paste, cinnamon, salt, and pepper.
  4. In a separate pot, melt butter and whisk in flour; gradually add milk while whisking until thickened. Season with nutmeg.
  5. Preheat oven to 350°F (175°C). Layer eggplant slices in a baking dish, followed by the meat mixture, then top with béchamel.
