- 2 tbsp extra virgin olive oil
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh thyme, chopped
- 1 lemon, halved
- 1 head garlic, halved
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 3 cups mixed vegetables (carrots, potatoes, onions) (optional)
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and rub it all over with olive oil.
