  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 1 lemon, halved
  • 1 head garlic, halved
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 cups mixed vegetables (carrots, potatoes, onions) (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and rub it all over with olive oil.
  3. Season the chicken generously with salt and pepper inside and out. Place garlic and lemon halves in the cavity.
  4. Stuff chopped herbs under the skin of the chicken for enhanced flavor.
  5. Place the chicken in a roasting pan; surround it with optional chopped vegetables if desired.
  6. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  7. Allow the chicken to rest for 10-15 minutes before carving.
