  • 1 cup whole wheat flour
  • 1 scoop (30g) protein powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup honey or maple syrup
  • 1/2 cup milk (or non-dairy milk)
  • 2 large eggs
  • 1 cup fresh blueberries
  • Optional: 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Grease muffin tins or line with paper liners.
  2. In a bowl, whisk together the flour, protein powder, baking powder, salt, and cinnamon.
  3. In another bowl, mix honey (or maple syrup), milk, and eggs until smooth. Combine with dry ingredients until just mixed.
  4. Gently fold in blueberries.
  5. Fill muffin tins about three-quarters full with batter and bake for 18-20 minutes until golden brown and a toothpick comes out clean.
