  • 2 cups fresh cucumbers, sliced (about 2 medium cucumbers)
  • 1 cup sweet bell peppers, diced (mixed colors)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt & pepper to taste

Instructions

  1. Wash cucumbers and sweet peppers thoroughly. Slice cucumbers into thin rounds and chop sweet peppers into bite-sized pieces.
  2. Finely chop the red onion and add it to a large mixing bowl along with the cucumber and bell pepper.
  3. Add chopped parsley to the bowl.
  4. Drizzle olive oil over the vegetables and squeeze in lemon juice. Season with salt and pepper to taste.
  5. Toss everything together until well combined.
  6. Cover and refrigerate for about 30 minutes to enhance flavors before serving.
