  • 1 cup full-fat coconut milk
  • 1 cup fresh blueberries, rinsed

  • 1 tbsp lemon juice (freshly squeezed)

Instructions

  1. Prepare popsicle molds by ensuring they are clean and dry.
  2. Blend strawberries with lemon juice and honey until smooth. Pour into the bottom third of each mold.
  3. Blend coconut milk with honey until well combined. Carefully pour over the strawberry layer until molds are two-thirds full.
  4. Blend blueberries with lemon juice and sweetener until smooth. Top off each mold with this mixture before inserting wooden sticks.
  5. Freeze for 4-6 hours or until solid.
  6. To release popsicles, run warm water over the outside of the molds for a few seconds.
