  • 2 lbs Idaho potatoes, cubed
  • 1 head fresh garlic
  • 4 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • ½ tsp freshly cracked black pepper
  • 2 tbsp fresh rosemary or thyme (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the Idaho potatoes thoroughly, then cut them into even cubes.
  3. Slice off the top of the garlic head, drizzle with olive oil, and wrap in foil.
  4. In a large bowl, combine cubed potatoes, olive oil, salt, pepper, and herbs. Toss until evenly coated.
  5. Spread the seasoned potatoes on a baking sheet in a single layer and place the wrapped garlic alongside.
