- 2 lbs Idaho potatoes, cubed
- 1 head fresh garlic
- 4 tbsp extra virgin olive oil
- 1 tsp sea salt
- ½ tsp freshly cracked black pepper
- 2 tbsp fresh rosemary or thyme (optional)
- Preheat your oven to 400°F (200°C).
- Wash and scrub the Idaho potatoes thoroughly, then cut them into even cubes.
- Slice off the top of the garlic head, drizzle with olive oil, and wrap in foil.
