  • 1 lb ribeye steak
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 4 oz fresh mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Marinate the steak by mixing balsamic vinegar, olive oil, salt, and pepper in a bowl. Coat the ribeye thoroughly and let it marinate for at least 30 minutes.
  2. Preheat your grill to medium-high heat (about 400°F).
  3. Grill the marinated steak for 6-8 minutes per side for medium-rare.
  4. In the last minute of grilling, add slices of mozzarella and halved cherry tomatoes on top of the steak and close the lid to melt.
  5. Remove from the grill and let it rest for 5 minutes before slicing against the grain.
  6. Serve garnished with fresh basil and additional balsamic glaze if desired.
