  • 1 cup fresh breadcrumbs

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup ketchup (divided)
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a loaf pan.
  2. In a skillet, sauté chopped onion in olive oil over medium heat until translucent (3-4 minutes).
  3. In a large bowl, mix ground chicken, breadcrumbs, sautéed onions, eggs, garlic, parsley, salt, pepper, and half of the ketchup until combined.
  4. Transfer the mixture to the loaf pan and shape evenly.
  5. In a small bowl, mix remaining ketchup with brown sugar and Dijon mustard; spread over the meatloaf.
  6. Bake for 45-50 minutes until golden brown and internal temperature reaches 165°F (74°C).
