Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh broccoli florets
  • 1 cup long-grain white rice
  • 2 tsp olive oil
  • 1 tsp garlic powder
  • 3 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Pat chicken breasts dry with paper towels and season generously with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add chicken to the skillet; cook for 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove from skillet and let rest.
  4. In a separate pot, combine rice and 2 cups of water or chicken broth; bring to a boil then reduce heat, cover, and simmer for 18 minutes until fluffy.
  5. In the same skillet used for chicken, add broccoli florets with a splash of water; cover tightly and steam for about 5 minutes until bright green.
  6. Slice rested chicken; fluff cooked rice with a fork and add it to the skillet with broccoli. Pour in soy sauce and mix gently before cooking for an additional minute.
  7. Serve warm with optional garnishes like sesame seeds or chopped green onions.
