  • 2 cups fresh spinach
  • 1 cup cremini mushrooms, finely chopped
  • 3 cloves garlic, minced
  • 1 cup fresh breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and mushrooms; cook until golden.
  3. Stir in spinach until wilted, then remove from heat. Fold in breadcrumbs, Parmesan, thyme, rosemary, salt, and pepper.
  4. Butterfly beef tenderloin by slicing lengthwise but not all the way through. Open like a book.
  5. Spread filling on one half of the tenderloin; fold back over and secure with twine if needed.
  6. Roast for 30-35 minutes or until desired doneness.
