  • 1 cup fresh mushrooms (cremini or button), sliced
  • 1 clove garlic, minced
  • 1 tablespoon unsalted butter (plus extra for spreading)
  • 1 cup aged cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, melt 1 tablespoon of butter. Add sliced mushrooms and minced garlic; sauté until tender and golden brown (about 5-7 minutes). Season with salt and pepper.
  2. Spread softened butter on one side of each slice of sourdough.
  3. Place one slice butter-side down in a clean skillet. Layer with sautéed mushrooms followed by shredded cheddar cheese. Top with another slice of bread, butter-side up.
  4. Grill over medium-low heat until golden brown on one side (about 3-4 minutes). Carefully flip and grill until both sides are crispy and cheese has melted.
  5. Remove from heat, slice in half, and serve warm.
