  • 1 cup carrots, diced (or frozen)
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 tbsp low-sodium soy sauce
  • 1 cup peas or bell pepper, chopped (optional)

Instructions

  1. Prepare your ingredients: chop the onion, dice the carrots, and mince the garlic.
  2. (Optional) Sauté onions and garlic in olive oil until fragrant before adding to the slow cooker.
  3. Place turkey breast at the bottom of the slow cooker. Layer brown rice on top followed by vegetables and spices.
