- 1 lb ground beef (80/20)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups enchilada sauce (store-bought)
- 8 corn tortillas
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
- 1 tsp cumin
- 1 tsp chili powder
- sour cream for serving (optional)
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, add olive oil and sauté the chopped onions until translucent. Add minced garlic and cook until fragrant.

- Pour half of the enchilada sauce into the beef mixture; stir well and let simmer for 5 minutes.
