- 3 boneless skinless chicken breasts (about 1.5 lbs)
- 1 cup full-fat Greek yogurt
- 1 medium cucumber, grated
- 2 tbsp fresh dill, chopped
- 2 tbsp freshly squeezed lemon juice
- 2 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- ½ small red onion, thinly sliced
- 2 tbsp olive oil
- Salt and pepper to taste
- Grill or pan-sear chicken breasts over medium heat for 6-7 minutes per side until golden brown and the internal temperature reaches 165°F. Allow to rest before slicing.
- In a bowl, mix Greek yogurt, grated cucumber (squeezed dry), minced garlic, chopped dill, lemon juice, salt, and pepper to create the tzatziki sauce.
- While the tzatziki chills in the refrigerator for about 15 minutes, chop cherry tomatoes and slice red onions.
- Combine sliced chicken with tomatoes and onions in a large bowl. Pour tzatziki sauce over the top and gently toss until evenly coated.
- Chill in the refrigerator for an additional 15-20 minutes before serving.
