  • 3 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat Greek yogurt
  • 1 medium cucumber, grated
  • 2 tbsp fresh dill, chopped
  • 2 tbsp freshly squeezed lemon juice
  • 2 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Grill or pan-sear chicken breasts over medium heat for 6-7 minutes per side until golden brown and the internal temperature reaches 165°F. Allow to rest before slicing.
  2. In a bowl, mix Greek yogurt, grated cucumber (squeezed dry), minced garlic, chopped dill, lemon juice, salt, and pepper to create the tzatziki sauce.
  3. While the tzatziki chills in the refrigerator for about 15 minutes, chop cherry tomatoes and slice red onions.
  4. Combine sliced chicken with tomatoes and onions in a large bowl. Pour tzatziki sauce over the top and gently toss until evenly coated.
  5. Chill in the refrigerator for an additional 15-20 minutes before serving.
