  • 4 cups romaine lettuce, chopped
  • 1 cup cucumber, diced
  • 1 cup ripe tomatoes, diced
  • 1/2 cup radishes, thinly sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup pomegranate seeds
  • 2 pita bread rounds, toasted and torn
  • 3 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • 2 tsp sumac spice
  • Salt and pepper to taste

Instructions

  1. Wash and dry all vegetables thoroughly.
  2. Chop the romaine lettuce, cucumber, tomatoes, radishes, and green onions. Combine in a large bowl.
  3. In a separate bowl, whisk together lemon juice, olive oil, sumac spice, salt, and pepper until well combined.
  4. Pour the dressing over the vegetables and toss gently to coat evenly.
  5. Just before serving, fold in the toasted pita pieces and garnish with parsley and pomegranate seeds.
