  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 tsp chili powder
  • 4 garlic cloves, minced
  • 2 cups cooked rice (white or brown)
  • 1 cup sliced bell peppers (red and yellow)
  • 1 avocado, sliced
  • 1/2 cup sour cream or Greek yogurt
  • Salt & pepper to taste

Instructions

  1. In a bowl, mix lime juice, minced garlic, chili powder, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Heat a grill pan over medium-high heat. Cook the marinated chicken for about 6-7 minutes per side until fully cooked (internal temperature of 165°F).
  3. In another pan, sauté sliced bell peppers in olive oil over medium heat for about 5-6 minutes.
  4. Prepare the rice according to package instructions if not already done.
  5. Assemble bowls with a layer of rice topped with sliced chicken, sautéed peppers, avocado slices, cilantro, and a dollop of sour cream or Greek yogurt.
  6. Serve immediately and enjoy!
