Instructions

  1. Boil the cubed Yukon Gold potatoes in salted water until fork-tender, about 10-12 minutes.
  2. While the potatoes cook, prepare an ice bath. Blanch the trimmed green beans in boiling water for 3-4 minutes until bright green, then transfer to the ice bath.
  3. In a bowl, whisk together Dijon mustard, olive oil, salt, and pepper until well combined.
  4. In a large mixing bowl, combine drained potatoes, blanched green beans, red onion, and cherry tomatoes. Pour dressing over the salad and gently fold to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
