Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1 red bell pepper, diced
  • 2 small zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse chicken breasts under cold water; pat dry. Season both sides with salt, pepper, and oregano.
  2. Heat olive oil in a large skillet over medium-high heat. Sauté the chicken for about 5-6 minutes per side until golden brown and cooked through (165°F/75°C). Remove and set aside.
  3. In the same skillet, add diced red bell pepper, sliced zucchini, and halved cherry tomatoes. Cook for about 5 minutes until softened.
  4. Stir in minced garlic and cook for an additional minute until fragrant.
  5. Return chicken to the skillet; add feta cheese and squeeze lemon juice over everything. Stir gently to combine and warm through for about 3-4 minutes.
  6. Sprinkle with chopped parsley before serving.
